Peach jalapeño cupcakes w/peach jalapeño frosting & candied bacon



Peach jalapeño cupcakes with peach jalapeño frosting topped with candied bacon


Makes about 18-20 cupcakes 

1-1/2 cups cake flour
1/2 tsp Kosher salt
1/2 tsp baking soda 
1-1/4 tsp baking powder 
1 tsp ground cinnamon 
2 large eggs 
3/4 cup sugar 
2/3 cup peach jalapeño jam/preserve (if you can't find it you can get peach and jalapeño and mix them together.) 
1-1/2 tsp pure vanilla extract 
1/2 cup vegetable oil
1/2 cup milk
Candied bacon 

Preheat oven to 350 degrees F : line 2 muffin tins with paper cup Liners. In a large bowl whisk together the flour, salt, baking soda, baking powder, ground cinnamon and set aside. 

In mixer using the paddle attachment (optional you can hand mix) beat egg, sugar, peach jalapeño jam, vanilla extract, vegetable oil together. 

Turn the mixer on low speed and alternate the dry ingredients and milk until fully combined. With a spatual fold in candied bacon pieces. Fill cupcake lines 3/4 full. Bake for 16-18 minutes or until you can insert a toothpick and it come out clean. Cool cupcakes in the ten for 5 mind then remove to wire racks to cool completely before frosting. 

Peach jalapeño frosting

2 (8oz) packaged of cream cheese, softened slightly and cut into pieces
8 tablespoons butter, softened slightly and cut to pieces 
1-1/2 tsp pure vanilla extract 
5-6 cups confectioners sugar, sifted 
1/2 cup peach jalapeño jam. 

In a medium size bowl and the medium speed beat the cream cheese and butter until smooth, about 3 minutes. Add vanilla extract. Add 3 cups of the powdered sugar and slowly beat until incorporated. Add the peach jalapeño jam a tablespoon at a time until your icing has reached the desired flavor. Add more confectioners sugar and continue to beat until the icing is thick enough to pipe onto the cupcakes. 

Then top with a piece of candied bacon.

Roast beef sandwich w/ gravy

You will need:

Roast beef
1 package of ranch dressing mix
1 package of brown gravy mix
1 stick of butter
1/4 cup water

Place your roast in a crock pot. Then sprinkle on top the package of ranch dressing, the the package of brown gravy finish it by placing a stick of butter on top of the roast. 

Turn on high - 6 hrs
(Be sure after the butter melts to put some on top of your roast from time to time so it doesn't dry out.) 
After you the butter melted add 1/4 water . 
Cook until you can pull the roast apart. 

Then remove the roast from the crock pot and pull apart 
Take the gravy mix out of the bottom of the crock pot. Place in a bowl and add a little flour. The amount of flour depends on the amount of liquids you have. Stir until it thickens up
Then place meat on a bun, add the gravy and enjoy. I used Kings Hawaiian buns.

Pepperoni Stromboli

You will need

1 pizza crust
Pepperoni 
Cheddar cheese 
Mozzarella cheese
Pizza sauce
Preheat oven to 350 degrees. 

Flour a space then roll out your pizza crust. 
Layered cheddar cheese, 
mozzarella cheese 
then pepperoni. 
Roll up the pizza crust into a roll. 
Spray a cookie sheet with cooking spray, then place roll on the sheet, bake for 20-25 mins until crust is browned.
 Then remove from the oven let sit for 5 mins then cut, serve and enjoy

Buffalo Chicken Roll

You will need:
3 chicken breast 
Olive oil
Pizza dough  
Shredded mozzarella cheese
Shredded cheddar cheese
1/2 cup franks red hot sauce
1/3 cup ranch dressing



Cut the chicken breast into small bit size pieces, put olive oil in a pan and heat up, add cut up chicken and salt and pepper to taste and cook it completely. Then add 1/4 cup franks red hot sauce. Stir into the chicken and coat it all. Let simmer for a few mins then remove from the heat and let completely cool.

Pre-heat oven to 425
On a well floured surface open the pizza crust and spread out.
Mix ranch dressing and 1/4 franks red hot sauce together then pour on the dough and spread around.
Add Chicken
 and Cheddar cheese
and Mozzarella cheese (we like a lot of cheese but you can choose how much you would like)


If you like yours even more spicy add more franks sauce.
Then turn in the sides and roll up the dough like a pinwheel (you turn in the sides so you don't lose all your inside a)
Spay a cookie sheet with cooking spray to keep it from sticking. Put your roll on the cookie sheet
Place in the oven and bake for 20-25 mins
Once you take it out of the oven let it stand for 5 mins then serve and enjoy

(My husband ate one of these rolls himself and asked for me to make more the next day. It's very good!)




Italian seasoned breaded pork chops


You will need:

6 large loin pork chops
bottle of ranch dressing
3 cups of Italian seasoned bread crumbs
1 package of dry Italian dressing mix
2-3 tablespoons parmesan cheese
1 tablespoon garlic powder



Preheat oven to 350 degrees.
In a bowl mix bread crumbs, Italian dressing mix, Parmesan cheese and garlic powder. In another bowl pour some ranch dressing.
Take a cookie sheet cover it with aluminum foil and spay with cooking spray.
Take pork chop dip it in the ranch dressing to fully coat. Then dip in the bread crumb mixture and fully coat all sides. Then place on the cookie sheet and repeat until they are all covered and on the sheet.
Then place in the oven for 45 mins or until the thickest part of the chop reach 160 degrees on the inside.

Serve as soon as they are done for best flavor.

Breakfast casserole


Because if the size of my family I doubled this for a 9x13 pan. But here it the smaller amount

Serves: 6

Ingredients
2 cups rolled oats or oat meal
1/3 cup brown sugar
1 teaspoon baking powder
1 teaspoon cinnamon
1/2 teaspoon salt
1 cup walnut pieces
1 cup raspberries {any berries work I used strawberries and blueberries}
1/2 cup milk chocolate chips
1 banana sliced
2 cups of milk
1 large egg
3 tablespoons butter (melted)
1 tablespoon vanilla extract

Preheat oven to 375°F and generously spray the inside of a baking dish with cooking spray. In a large bowl, mix together the oats, sugar, baking powder, cinnamon, salt, half the walnuts, half the strawberries and half the chocolate. (Save the other half of strawberries, walnuts and chocolate for the top of the oatmeal).
In another large bowl, whisk together the milk, egg, butter and vanilla extract. Add the oat mixture to prepared baking dish. Arrange the remaining strawberries, walnuts and chocolate on top. Add the banana slices to the top then pour the milk mixture over everything. Gently shake the baking dish to help the milk mixture go throughout the oats.
Bake 35 to 40 minutes or until the top is nicely golden brown and the milk mixture has set. For an extra tasty top, sprinkle a tablespoon or so of extra brown sugar.




Homemade from scratch Hot Coco

–1.5 cups of heavy cream
–1 can of sweetened condensed milk (14 oz)
–2 cups of bittersweet chocolate chips
–6 cups of milk
–1 tsp vanilla extract

In a large pot over low heat, combine all of the above ingredients. Stir regularly for 30-40 minutes until chocolate is Melted and completely mixed in. Put I'm cups, add marshmallow on top.

Bruschetta baked chicken

2-3 boneless chicken breast, halved
1 bottle of sun dried tomato marinade
2-3 Roma tomatoes, diced
5 fresh basil leafs, finally chopped
Olive oil
Shredded Mozzarella cheese

Marinade chicken over night in the sun dried tomato marinade. Preheat oven to 350 degrees F.
Place chicken in oven safe dish with some marinade
In a bowl toss tomatoes, Basil and olive oil. Then spread over the chicken breast.
Loosely cover with aluminum foil place in the oven. Cooking time verys by oven. 20-40 mins.
Once chicken breast are completely cooked remove foil, add cheese on top of the chicken breast and place back in oven for about 10 minutes.

Then enjoy ⚓

With my chicken I served over top of noodles and added some of the sauce on top and made some potatoes to go with it.




Beans and sausage

So this might not look like a million buck.. But, it taste really good and has a kick to it. It's great for busy days when you need something simple.

I used
2 large cans of home style baked beans (adjust amount for your household)
2 cans of ro-tel
1 lbs of smoked sausage

I put all 4 cans in the crockpot, cut the sausage into pieces added it to the crockpot the stirred and placed on high. Cook until sausage is cooked. Stirring from time to time.

It's really easy and simple and taste really good.

Chocolate covered peanut butter balls

Watch out Reese! These are amazing! Theses can also make buckeyes

2 cups creamy peanut butter (I used a 16.5 oz jar of Peter Pan)
1/4 cup salted butter (at room temp)
1/2 teaspoon vanilla extract
2 1/2 cups powdered/confectioners sugar (may need more)
Chocolate to dip in

Start with the peanut butter and butter and mix well, add one thing at a time and keep mixing, once you've added the powdered sugar and mixed it completely make sure it's not stick if it is add more sugar and mix again (keep doing until no liger sticky.)

Roll into about 1in balls and place on a cookie sheet covered with parchment paper, put in the freezer until hard (30 mins to 1 hr) the take a few out at a time and dip in melted chocolate, place onto a cookie sheet covered with parchment paper then place in freeze to set.

Then eat and enjoy! ⚓

Oreo truffles

1 package if regular Oreos
1 8oz package of cream cheese
Milk or dark Chocolate (melted)
White chocolate (optional)

Take Oreos and separate the Cookie from the cookie cream and place in another bowl, once all the cream is taken out of the cookies, take the cookies an place in a blender (or magic bullet or etc) turn into a fine crumb then place in a bowl, mix cream cheese and cookie creams together, once mixed place fine cookie crumbs and cream cheese mix together and mix til well blended.

Roll into about 1in balls and place on a cookie sheet covered with parchment paper, put in the freezer until hard (30 mins to 1 hr) the take a few out at a time and dip in melted chocolate, place onto a cookie sheet covered with parchment paper drizzle with white chocolate (optional) then place in freeze to set.

Then eat and enjoy!

(Any left over truffles need to be placed in the fridge for storage due to cream cheese)








Non-spicy Gumbo (good for kids and people who can't eat spicy food)

3 large boneless chicken breast
Salt & pepper
1/4 cup olive oil
1lbs smokes sausage, chopped
1/4 cup all-purpose flour
5 tbls margarine
1 large onion, chopped
8 cloves garlic, minced
1 large green bell pepper, seeded and chopped
3 celery stocks, chopped
1/4 cup Worcestershire sauce
1/4 (about .25 oz) bunch flat leaf parsley, steam and leaves coarsely chopped
4 cups water
5 beef bouillon cubes
1 (14oz can) stewed tomatoes and juice
2 cups (16oz bag) frozen cut okra
4 green onions, chop green and white part
1/2lbs (1 bag) small shrimp, peeled, deveined and cooked

Season chicken breast with salt and pepper, heat olive oil in pot at med-high heat, put in chicken breast and brown on both sides then remove, cook sausage and brown then remove. In pot sprinkle flour over the oil, add 2tbls margarine cook over med heat, stirring constantly until brown about 10 mins, let the roux cool.

Return pot to low heat melt 3tbls margarine, add onions, garlic, bell pepper and celery and cook for 10 mins, add Worcestershire sauce, salt and pepper to taste and parsley, cook while stirring frequently for 10 mins, add water and bouillon cubes whisking constantly, add the chicken and sausage to the pot and bring to a boil then reduce the heat, add tomatoes, okra, green onions and shrimp , cover and simmer for 1 hr 45 mins
